Your first guess was correct: Those were light-sensitive Theremins in the opening number.

Great show. I had no idea what to expect, but I was pleasantly surprised (I mean, I like the records, but was expecting a more static live experience). Lester's guitar work added a lot to their sound, and the imaginative visuals brought it all home.
